At Fossa Sicca, biodynamic wine is, above all, the expression of a place. For over eight centuries, vines have graced the Brossay plateau, south of Saumur. Here, a rare terroir of flint and iron oxide imparts tension, mineral brilliance, and saline freshness to the wines.
Farmed using organic (Ecocert) and biodynamic (Biodyvin) methods, the vines find their balance within a forty-five-hectare estate, of which only fifteen are planted. Forests, meadows, ponds, beehives, and pollinator fallows make up a preserved ecosystem—a recognized LPO wildlife refuge—where biodiversity plays an integral role in the identity of the wines.
In the cellar, fermentations using indigenous yeasts, egg-shaped clay concrete vats, and deliberately measured intervention further this pursuit of precision. Each vintage is born from the encounter between a unique soil, a specific year, and time. This is the very essence of our philosophy.
From Chenin Blancs to Cabernet Franc reds, and including sparkling wines, each bottle precisely expresses the personality of the flint. Arcane reveals the purity and tension of Chenin, while Eolithe embodies the elegance and depth of Cabernet Franc. Discover also our whites, reds, sparkling wines, and magnums, each offering a different interpretation of this unique terroir.
Today, Fossa Sicca is carried forward by brothers Guillaume and Adrien Pire, alongside Guillaume Séché. Together, they rigorously continue the estate’s history, guided by a single conviction: to let the terroir express itself with sincerity, while respecting both living things and the vintages.
