The Reds

Cabernet Franc

Finesse rooted in life

On our 10 hectares, this late-ripening grape variety develops at its own pace, in perfect harmony with the terroir and biodiversity. It produces delicate, precise red wines with aromas of raspberry, violet, and fine herbs. Its supple texture reflects the depth of the soil and the breathing space of the estate.

Cabernet Sauvignon

The verticality of a grape variety that looks far ahead

Later-ripening and structured, our single hectare of Cabernet Sauvignon becomes Laurasie, a dense and straightforward wine, built to last. Its noble tannins and firm texture combine with aromas of blackberry and blueberry. A wine of patience and tension, reflecting the Brossay plateau and its light.

The White

Chenin

Son of Anjou, companion of the centuries

Present on 5 hectares, this thousand-year-old grape variety expresses citrus, lemongrass, and quince. It captures the subtlety of the terroir: rain, wind, mist, and sun are all part of its aromas.


When botrytis envelops the grapes, Chenin transforms into a luminous nectar, giving rise to the sweet wines De But en Blanc and Panthalassa (lightly botrytised Chenin). These are wines where sweetness and freshness coexist, where time slows down to make way for emotion.

The Terroir

The Fosse-Sèche vineyard covers 45 hectares in a single block, only a third of which is planted with vines. It rests on soil formed in the Jurassic period, composed of flint and iron oxides, a rarity in the Saumur region, which is dominated by limestone.

The vineyard's slightly convex position provides a cool and windy exposure. Combined with the warm soil due to the flint, this configuration gives the Fosse-Sèche wines a distinctive directness and freshness.
